【真的假不了】真蜂蜜 加水搖一搖氣泡不散

近2年全台蜂蜜大減產，市售蜂蜜常被驗出混果糖冒充真蜜，如何分辨市售蜂蜜真假？桃園龍潭蜂蜜產銷班、蜜蜂阿虎老闆江虎初表示，以下簡單方法有助辨真假：

1氣泡：將蜂蜜倒入水瓶中，搖一搖，其中假蜜產生的氣泡很快消失、甚至沒有氣泡，真蜜產生的氣泡可維持久久不散。

2透光性：假蜜清徹透明、透光性較高；真蜜較混濁、透光性低，手指放在瓶後，真蜜五指看來較模糊，假蜜則五指清晰。

3結晶：有結晶一定是真蜜嗎？天然荔枝蜜(貴妃蜜)的確會產生結晶，結晶是真蜜判別方法之一，但近年已有不肖業者混蜜做到結晶狀(利用少量真蜜混合葡萄糖)，判斷上要小心。
