薯條洋芋片　美食管局警告多吃致癌

【張渝萍／綜合報導】很多食物中都含毒性化學物質「丙烯醯胺」（acrylamide），尤其以洋芋片和薯條含量最多，此化學物質有致癌疑慮，美國食品藥物管理局（Food and Drug Administration，FDA）15日公布新注意事項，建議民眾應減少攝取。

丙烯醯胺（醯音同西）是糖和胺基酸「天門冬胺酸」（aspartate）經長時間高溫烹調時結合產生，普遍存於以高溫加熱的碳水化合物中，如麵包、餅乾、穀類等，連咖啡、乾果都有，在特別是在油炸、煮過頭或燒焦時。世界衛生組織（WHO）指，動物實驗已證實丙烯醯胺是致癌物，人攝食過量會傷害神經，雖因過量造成神經傷害的情況很少見，但若飲食習慣不佳，仍可能會傷害DNA，導致癌症。

FDA及美國國家癌症研究所就建議可以蒸煮取代油炸，另外還發現若將馬鈴薯放冰箱後再料理，或食物以攝氏120度以上溫度烹調都會產生更多丙烯醯胺。
